Details
Ajam paniki is a rich and aromatic Indonesian dish where tender chicken thighs are slow-cooked in a creamy sauce of coconut milk, citrus, and fragrant spices. Served with basmati rice.
Fun fact: Ajam paniki originates from North Sulawesi in Indonesia, a region known for its distinctly spicy cuisine and the use of fragrant ingredients such as lemongrass, kaffir lime leaves, and candlenuts.
Ingredients
Chicken thighs, coconut milk, shallots, garlic, ginger, lemongrass, kaffir lime leaves, lime, candlenuts, turmeric, coriander powder, palm sugar, sunflower oil, basmati rice, and salt.
Heating
Microwave: remove the lid and cover, for example with a microwave-safe cover. Heat for 2–3 minutes at 800 W. Stir or shake and heat for another 30–60 seconds if necessary.
Pan: heat gently in a pan with a small dash of oil or butter until the desired temperature is reached.
Oven: heat in an ovenproof dish for 15–30 minutes at 150 °C. Covering it prevents it from drying out.
